A prestigious local business will be moving into a new location this summer.

Grist Milling and Bakery has developed a reputation in Missoula for making quality bread from Montana grains. In 2023, I spoke with Selden Daume, one of the owners of Grist Milling and Bakery, about their nomination for a James Beard Award. He told me about the "slow, cold fermentation process" that they use to create their bread which makes it easier to digest. In my opinion, this process gives their bread a distinct flavor and texture.

Grist Milling and Bakery is located at 525 E Spruce Street inside Black Coffee Roasting Company but will move to 520 Grant St. in the summer of 2024 according to a post on Instagram. They say that the move has been in the works for five years.

As they share above, their breads and pastries will be available at Black Coffee, but you can also find their bread in grocery stores and restaurants around Missoula:

  • Orange Street Food Farm

  • Pattee Creek Market
  • Rattlesnake Market

The new location will be right off 3rd Street, putting them close to the Good Food Store and in the River Road Neighborhood of Missoula. In the post, they say the new building will be shared with Hone Architects + Builders, who have been doing the architecture work.

One commenter asked if they would have coffee at the new location and they replied, "we will be (the) bakery that has drip coffee."
